Strawberry & Cranberry Muffins
Ingredients:
1-3/4 c flour, sifted
2 tsp baking powder
1/2 tsp salt
1/2 c white sugar
1/4 c melted butter
1/2 c milk
1 egg
1 tsp. vanilla
1 c chopped strawberries
1 c dried cranberries
Cinnamon sugar
1. Preheat oven to 375 degrees. Line muffin tin with paper (12-15)
2. Put dry ingredients in large bowl. Add butter, milk, egg and vanilla. Mix. Add strawberries and cranberries.
3. Fill muffin cups. Sprinkle with cinnamon sugar. Bake for 25 minutes.
Sort of experimental. Next time will try adding some brown sugar and orange zest in the mix and putting cinnamon into the batter. Enjoy.
